Familia, are you ready for a Flavor Fiesta? Our WAVE to TABLE Mariscada Fabulosa Edition will be abosultely amazing!

Shrimp-Stuffed Chiles Relleno Quesataco - That’s a mouthful. I know. Basically, it’s taco made out of fatty cheese stuffed with shrimp-stuffed California chiles. So many options here. You can add a tortilla over the cheese or even skip the cheese entirely! Topped with avocado salsa taquera, any way you serve it it’s the perfect bite.

Avocado Salsa Taquera - There’s always a creamy, bright avocado-based salsa at the taquerias to brighten up any and all tacos. This is my version. It’s easy and delicious and lasts a couple days in the fridge. Use serranos or jalapeños depending on desired spice level!

Potato-Crusted Salmon Served with Chicharron de Chile - I made this in culinary school 25 years ago and hadn’t made it since! It’s like searing a latke over a side of salmon and finihing it in the oven. You can serve on its own with a little lemon, but I will add two bonus recipes from the Familia Cookbook in case you want to add a little punch; Chicharron de Chile and/or Chimichurri Salsa Verde.

Frijoles de la Olla (as a base for our side recipe)- You can always purchase refried beans but I will give you a detailed recipe on how to make frijoles de la olla (that are absolutely delicious and so healthy on their own topped with a bunch of herbs, crema and salsa) and how to turn those frijoles de la olla into frijoles machacados (smashed beans for stuffing chiles or serving as a side.)

Chile Mulato Stuffed with Smashed Beans and served over a Piloncillo Tomato Salsa- Mulato chiles are rehydrated in a mix with piloncillo and vinegar, stuffed with smashed beans and gratineed with Chihuahua cheese! That same piloncillo mixture is used to season the tomato salsa that serves as the base for these unique and spectacular chiles rellenos!
