This April, come join our founder Christina Gdisis, for a cooking class that honors the spirit of spring, a time of renewal, lightness, and fresh beginnings. We’ll be cooking with the seasons, using simple, plant-based ingredients that bring the flavors of the Mani Peninsula—a rugged, beautiful region of southern Greece—right into your kitchen.

As we transition into Kapha season, which is all about fresh energy and balancing the heaviness of winter, we’ll be preparing dishes that nourish both the body and soul. These recipes focus on seasonal, plant-based ingredients that are perfect for this time of year—light, but satisfying, with plenty of flavor.


Here’s what we’ll be making:


  1. Mani-Inspired Chickpea & Spinach Stew - This is one of those simple, heartwarming stews that’s just perfect for the changing seasons. We’ll use chickpeas, fresh spinach (or any wild greens you might find), juicy tomatoes, and a burst of lemon to create a dish that feels like a warm hug. We’ll talk about how this dish, rooted in the Mediterranean, is all about simplicity and seasonal abundance.
  2. Lemon & Herb Olive Oil Cake - For dessert, we’ll make a light, citrusy olive oil cake, with fresh lemon and herbs. It’s a perfect example of how Greek flavors come together to celebrate the season. We’ll keep it simple but full of bright, uplifting flavors that remind you of sunny days and the beauty of spring.

Do I need to have prior cooking experience?

Not at all! This class is beginner-friendly and also offers tips for seasoned cooks to level up their skills.

Are the recipes vegan and gluten-free?

Yes! Both the chickpea stew and lemon cake are fully plant-based. The recipes can also be made gluten-free, and I’ll offer substitutions during the class.

What equipment or ingredients do I need?

A full list of ingredients and equipment will be sent to you one week before class. Most items are likely already in your kitchen!

Will I be cooking along or just watching?

You’re welcome to cook along or watch and take notes! The recording will be available afterward if you want to try the recipes later.

Is the class live, and will there be a replay?

Yes, the class is live, and you’ll also get access to a replay so you can revisit the recipes anytime.

What happens if I can’t attend live?

No worries! You’ll receive a recording of the entire class so you won’t miss a thing.

How long will the class be?

The class will be about 2 hours, including a Q&A session at the end to answer all your cooking questions.

Do I need special ingredients?

Most ingredients will be easily found at your local grocery store or farmers’ market. I’ll also send suggestions for substitutions if needed.
