Description:
No Indian spread is complete without one—or more—flatbreads, from tender roti to crispy poori. Join guest teacher Romy Gill for a livestream workshop where you’ll learn three doughs that can become five—or more!—essential Indian breads. We start with a versatile dough that can become either a roti or a chapati depending on how you cook and serve it. You’ll get familiar with atta, an easy-to-find whole grain flour that’s traditionally used for these flatbreads, and begin to develop good intuition for hydrating, mixing, kneading and resting this dough. Our second dough is subtly different and serves as the perfect foundation for stuffed parathas; Romy will show you one stuffed with richly spiced grated cauliflower. Use balls of this same dough to make poori, the classic fried accompaniment to Indian vegetable dishes. If the idea of frying dough makes you nervous, never fear. Romy will show you how to keep your cool while frying and how to ensure that you get delicate, crispy—not overly greasy—poori. Finally, we’ll make a not-so-flat bread: samosas whose Bengali influence means they’ve got nigella seeds in the dough and crushed peanuts in the filling. As we cook, you’ll learn about regional variations of each flatbread and Romy’s favorite dishes to serve them with.

Immediately after registering, you will get a confirmation email that contains the Zoom meeting log-in information. One week prior to the class (or within 48 hours, if you register less than one week in advance), you will receive instructions on how to prepare ingredients and equipment in order to cook along with us.
